Thursday Things

1. Tuition Refund + first paycheck in months = best week ever

2. After posting about that bauble necklace, I found a deal for a $20 one and ordered it! Unfortunately they said it would take about 2o to 30 days to ship. Womp. Oh well.

3. Since 8/19, I’ve had a migraine almost every other day. It’s getting a bit ridiculous. However, since then, I’ve watched almost all of parks and Recreations. I’ll be caught up before the season premiere which was filmed at DC!

4. I really miss DC.

5. Thank god it’s the end of the week. This first week of classes has been absolutely ridiculous, I’m so exhausted. Luckily I have a three day weekend now and I can sleep a lot, do some work, and actually re-prepare myself for school.

That’s all I have for now, too tired for more.

Thursday Things

1. I keep seeing this necklace everywhere. (photo from ilycouture.com)

Literally EVERYWHERE. It kept popping up all over blogs and the other day at work I saw at least 3 girls wearing a different color version of it. Normally a necklace like this would not be my thing…but after seeing it work with so many outfits, it’s starting to grow on me a lot. I have a feeling that it would go out of style as soon as I get it though, so maybe not.

2. Speaking of style/clothing things I’m geeking out over, American Eagle rolled out a whole new line of ballet flats! And with their new flats goes my hard earned money.

3. I got a save the date for one of my friend’s weddings! I’m really excited for it, but it’s crazy that so many people my age have already gotten married.

4. On a sadder note, the dinner I made tonight didn’t turn out so well. I think I need a little more experience with cooking tofu before I make a large chunk of my meal dependent on it. Lesson learned.

5. I know I’m starting to get restless and I’m okay with starting classes on Monday, but for my mental health, I need a few more weeks of vacation and summer.

6. This song has been stuck in my head for the past two days. I don’t have a love or loathing of it, but I would like a new song in my head please.

7. Even though I’ve heard their new songs, I somehow missed that a new Maroon 5 album came out. Either way, it’s now on my iTunes and I’m a happy camper.

8. Oooh! I was really excited about this yesterday and then completely forgot about it while I was writing this. I found a mix for Cinnamon Toast Crunch Cupcakes, along with coco puffs and reeses pieces. Since I was clearly impulse grocery shopping, I bought the cinnamon toast crunch ones. I think I’m going to have to make this pre made mix and try a from scratch recipe at the same time…there’s no such thing as too many cupcakes, right?

9. Does anyone else ever wonder if  Adele ever sits in a room and sobs to her own musics? I mentioned that to my friend and his response was, “Are those songs supposed to be sad? Thursday Things

1. I got to go Skydiving on Saturday. It was absolutely amazing! While falling was really cool, it was amazing just being able to hang in the sky and look at everything around me.  I was even able to see two different city skylines which was equally awesome.

3. I somehow managed to avoid the whole “back to school thing” for most of the summer so it still really hasn’t dawned on me that classes are starting in 1.5 weeks. I have really mixed emotions about this since I’m excited to start my LAST year of school, but at the same time, I would really rather just be done with classes and start working full time (I’m sure I’ll regret saying that later).

4. As much as I would love summer to last, outfits like this are helping me to get really excited for fall:

5. Hair Tutorials like this (tutorial for short hair girls) make me really want to learn how to french braid hair. New goal maybe?

6. For those who haven’t seen, watch Epke Zonderland’s Gold Medal High Bar Routine. My mouth was hanging open the entire time I watched it.

7. Victoria’s Secret just released their new NFL collection, I feel kind of weird about how excited I am about this….

8. …But it also means that preseason is ending soon and real games will begin!

9. The Counter, an LA burger place, serves wine milkshakes. I can’t really decide how I feel about this (since I like both things), but if I’m ever in LA, I absolutely want to try this.

Pink Lemonade Cake Cookies

In mid-July I got a call from my mom who was incredibly excited about a cake mix she had just found for pink lemonade cake. Except she didn’t want to have it as cake, she thought they would make much better cupcakes and she wanted me to be able to try them…meaning that I would be making pink lemonade cupcakes when I got home a few weeks later. Fast forward to this week when I’m home and my mom thought it was time to make the cupcakes. I had been on board with the idea of cupcakes until about two weeks ago when my friend Leandra posted about the cake batter cookies she had just made. I hadn’t made cake batter cookies in about two years and had forgotten how amazing they were.

For those of you who have never made cake batter cookies, here are some reasons why you should make some right now:
1. They’re incredibly easy to make
2. They taste amazing.
3. These cookies stay softer much longer than most cookies
4. It’s easy to make a wide variety of cookie flavors (walk to the baking aisle in your grocery store and choose your favorite cake mix).
5. They taste amazing (on here twice for emphasis).

So needless to say, the cake mix was going to be made into cookies, not cupcakes. Lucky for me, my mom tends to get on board pretty quickly with my baking ideas, and she even suggested that we add frozen strawberries to the cookies! Now, I’m sure that somewhere out there, there is a recipe for pink lemonade cake/cupcake/cookies that taste pretty good and you’re more than welcome to use, but we used a cake mix. Also, if you’re interested in making cookie sandwiches, these make excellent cookies for that also.

Cake Cookies

1 Cake Mix
2 Eggs
1/2 Cup of Canola Oil
(Optional) Whatever you would like to mix into the cookies: fruit, chocolate chips, nuts, etc.
Frosting

1. Preheat the oven to 350 degrees
2. Mix together the cake mix, eggs, and oil. If you’re planning on adding anything extra to batter, add it now.
3. Roll the batter into one inch balls and place on a sheet of parchment paper on a baking sheet.
[The dough for these cookies was super pink! My mom also suggested that we add strawberries, but I wasn’t sure how it would turn out, so I added kept half of the batter without (above) and added strawberries to the other half of the batter (below)]

4. Bake for 8 to 10 minutes or until the edges are golden brown (be careful following the “golden brown” rule if the batter is any color other than white/tan).

5. Remove from the oven and let the cookies cool. If you add fruit to the cookies and don’t eat all the cookies right away, the cookies will need to be refrigerated!
6. Frost the cookies if you’d like, I highly suggest it.

[Extra instructions, follow if you’re planning on making cookie sandwiches: roll the dough into balls a little bigger than 1 inch, split each ball in half and roll into a smaller ball. Place each ball on the parchment paper and then slightly push down with a fork. After you bake in the oven (for 6 to 8 minutes), let the cookies cool. Once the cookies have sufficiently cooled, frost the bottom side of the cookie  and place another cookie on top. Repeat until you’re out of cookies!]

These tasted really good! My mom had bought the pink lemonade frosting that went with the box of cookies, but I prefer to use cream cheese frosting. Both tasted really good, but I prefer the cream cheese frosting a little bit more. Also, the strawberries were an amazing addition, I was really happy that my mom thought to add them!

Long Time No See

Hi everyone!

Sorry about the unexpected hiatus. Between my internship, having little money to buy a lot of groceries, and well, having no kitchen, new recipes weren’t really happening. And while I’m not exactly back at school yet, I am back home where I have access to a fully stocked kitchen and a mother who really enjoys when her daughter bakes, or at least helps her make food. I have two different things to post, but I’ll divide them up into two different posts to make up for the 10 weeks of silence.

So the first, pizza. I spent a good two or three years of college protesting eating delivery pizza (still ate it when push came to shove, but I avoided it when I could). What?! A college student who doesn’t want to eat pizza?! Well yes. You would avoid delivery pizza for a while too if during days when you spent 5 hours cheerleading, it was the only thing you had the option of eating during your 30 to 40 minute break. I had started eating pizza again this year (because it was a majority of the free food you get in grad school) but apparently after that long break, my pizza craving came back with a vengeance. I spent half of the summer craving pizza and the other half eating pizza (okay, maybe not that extreme).

Luckily, my mom likes pizza also. Lucky for me though, she likes when we make our pizza instead. When I was younger, she use to make dough from scratch, but now that we’re older and wiser and have less time, we use pre-made crust. The nice thing about doing this is that everyone gets their own pizza, everyone can put on it what they want, and everyone gets leftovers (a big plus in my opinion).

The recipe (but not really a recipe though)

Pre-made Pizza Crust (my mom uses Mamma Mary’s but I also like using Boboli’s)
Olive Oil
Tomato Sauce (if you want)
Cheese (if you want)
Whatever toppings your heart desires

1. Pre-heat the oven to whatever your pizza crust tells you to.

2. Remove the pizza crusts from the packaging and lightly brush olive oil on the top of your pizza

3. Cover the pizza however you like (I prefer to go sauce, toppings, and then cheese)



4. Stick in the oven for 8 to 10 minutes. I prefer to stick the pizza directly on to the oven’s baking wires, but you can place it on a baking sheet if you prefer. However, when you remove the pizza from the oven, pull it out and on to a baking sheet. The pizza will be incredibly hot, so let it cool down for a bit.

The nice thing about the pre-made crusts is that prep time is so minimal that the majority of your time will be spent waiting for the pizza to cook in the oven. However, home made crust is absolutely delicious and if I can find it, I’ll try to post my mom’s homemade pizza crust dough recipe (I also like home made dough because you can put cheese in the crust!).

So I use to like just olives on my pizza, but over the summer, I realized that I also really like having pineapple on pizza. After combining the two on my pizza today, I can say that my ultimate pizza would be stuffed crust pizza with half pineapple half olives. What weird toppings do you like on your pizza?
